Whole Pheasant - 1-2 lbs.

The bird arrived just in time, as all of the enclosed frigid shipping material had defrosted. The extraneous wrapping material was insulation enough to maintain an acceptable degree of cold for the transport. Fortunately, the bird was still chilled, but partly defrosted. I refrigerated it immediately and baked it the next day. It was as I expected, very tasty.
