
Cod Casino
Move over clams, we've got a cod rendition you'll love! The classic recipe originated in the early 1900s when a maître d' at an upscale resort created the dish including bacon, breadcrumbs, garlic and bell pepper and a socialite named it "clams casino." The dish later became a popular Italian-American appetizer on the East Coast.
Cod Casino
Makes 4 servings
4 strips Fantasma's Finest Sugar Cured Smoked Bacon, crumbled
1 cup Italian-style panko breadcrumbs
1/2 small onion, finely chopped
2 cloves garlic, minced
1/4 cup finely chopped bell pepper
1/4 cup grated Parmesan cheese
1 handful of parsley, finely chopped
4 tablespoons butter, melted
4 Coastal Seafood Cod Loins (available in our retail store)
Garnishes: Smoked paprika, lemon wedges, parsley sprig
Preheat oven to 375° F.
Place a rack over a baking sheet and lay bacon strips in a row. Cook bacon for 15 minutes. Allow to cool on paper towels to absorb excess grease then crumble or cut into small pieces.
In a small mixing bowl, combine panko crumbs, onion, garlic, bell pepper, cheese, parsley, and bacon bits until evenly blended. Add melted butter and create a paste.
Place filet on the baking sheet rack and mound "casino"-style breadcrumbs on top. Bake fish for 15-20 minutes. Broil for 1-2 minutes, if desired.
Serve cod with lemon wedges, a dusting of paprika and garnish with parsley.
