Center Cut Frenched Pork Chops with Brandy, Maple Syrup and Mustard

Makes 2-4 servings

2 Fantasma's Finest Center Cut Pork Chops (Frenched)

A generous amount of salt and pepper

2 teaspoons rubbed sage

1 teaspoon ground allspice

Olive oil, for sauteing

1/2 cup Of the Earth Farm Distillery Apple Brandy

1/4 cup dark balsamic vinegar

1/4 cup stoneground mustard

1/4 cup maple syrup

2 tablespoons butter

Snipped chives, for garnish

Preheat the oven to 375° F.

Pat the chops with a paper towel. Season chops with salt, pepper, sage and allspice on both sides.

In a cast-iron skillet, heat a few teaspoons of olive oil in the pan and sear pork chops on both sides. Place the skillet in the oven and cook 15-20 minutes, or until the temperature reaches 145° F. on an instant read thermometer.

While chops are cooking, whisk together brandy, vinegar, mustard and maple syrup in a saucepan over low heat. Continue to reduce sauce until it reduces to a syrupy consistency, about 10-12 minutes. Whisk in butter to finish the sauce. Plate chops, add sauce and garnish with chives.

Allow pork chops to rest for 5-10 minutes before serving with sauce. Garnish with chives, if desired.
