Paradise Cocktail Meatballs
Makes 24 meatballs
2 pounds Fantasma's Finest Ground Beef
8 Fantasma's Finest Bleu Cheese Olives, sliced and diced (available in retail store)
1/2 square Hemme Feta Cheese (available in retail store)
1 pound finely diced portobello mushrooms, sauteed in butter, seasoned with salt-herb blend
1 3/4 cups panko breadcrumbs
1 egg
Chopped parsley and lemon zest, for garnish
Preheat the oven to 375° F.
In a mixing bowl, combine ground beef, olives, cheese, mushrooms, breadcrumbs and egg. Combine ingredients well until the meat sticks upside down to your hand. Shape mixture into 1 1/2-inch balls and place on a baking sheet. Bake meatballs for 20 minutes, turning once with a spatula to brown evenly.
Serve meatballs garnished with parsley and lemon zest and a martini glass.
